That’s right folks, 2/3 of the way through the ‘Going Green Commitment’ and we’re hanging in there. I’ve been really excited about the changes that we’ve made around our house and in our life and they really haven’t been that hard. A lot of the choices we’ve made (dining organically, active recreation) have been healthy and some (going Amish, the lights are off, minimal water use) have saved us money!
We are still continuing to try and create these things into habits so that when the ‘Going Green Commitment’ is over, they will become a natural part of our week and maybe even our daily lives. Baby steps have been our goal and we’re starting to cover some ground.
Wednesday is a day to eat organically and man am I excited for dinner! In my wife and I’s many adventures, we had an opportunity to travel to Thailand for one week. What an amazing place! The people are friendly, the beaches are beautiful and the food is amazing.
So tonight for dinner I’m going to cook a organic Thai meal. I found a ‘fried rice noodles with pork’ recipe at Easy Thai and am going to give it a shot. I am not a very good cook, but I’ve been married for four years, so I can follow directions well:) Plus, my wife is spending the day with 27 crazy fourth graders, so I think its my turn to cook.
So if you want to cook along with me, treat your family to Thai tonight. Its healthy and tastes great! Leave comments as to your experience, post other recipes or ask questions in our comment section below.
Check back tomorrow and I’ll let you know how it went!
